This month’s burger theme starts here with 8oz Burger and Co. as we set out “On the Town” to the establishment’s Capitol Hill location with Seattle burger expert Brent Hart (featured below).
8oz. Burger and Co. is a local restaurant with an old time saloon like feel to it’s aesthetic. We were especially impressed with the service and the quick cook time of our burgers as we were served within 15-20 minutes of arriving. Right off the bat, we were all blown away by the in house signature burger “The 8oz.” Soon after inhaling the burger down to its last crumbs, Brent exclaimed that “this has got to be the best burger in Seattle.” I initially took this statement as one that Brent didn’t really mean, it might’ve been an exaggeration, or a statement that might’ve slipped out in the heat of the moment. But then I reflected; the burger was seasoned and grilled to perfection. Served on a soft brioche bun that was lathered in truffle aioli and topped with sweet twangy balsamic bathed onions followed by a familiar salty Beechers Flagship Cheddar and finalized with slabs of decadent thick cut bacon. The burger didn’t have a single imperfection. Suddenly, snapping out of my drooling daydream, I realized that Brent actually meant what he was saying and that this might really be the best burger in Seattle.
Each of us present at this lunch ordered the 8oz.
signature burger, but a stacked menu is calling us back soon. The menu features 18 different burgers including their limited time featured burger and other interesting additions that range from The Union, that comes with an espresso rubbed patty and candied bacon to the Bahn Mi which boasts marinated beef and pork sausage with pickled vegetables, cilantro and a sriracha aioli.
I’ll also recommend the Green Tea Nutella Shake which was mind bogglingly good. The Nutella and green tea made an unexpectedly amazing pairing that made this matcha lover’s dream came true.
8oz. is a local creation and has two locations found in Capitol Hill and Ballard.
